First off, I'm sorry to not posting for the past week and a half! It has been crazy busy around here, but in the best way possible. I already mentioned it on instagram, but I'll say it again because I can hardly believe it - I bought an apartment!!! And by "I bought", I mean "my parents helped me out with the majority of the down payment because otherwise I'd never be able to afford it". But yeah!! It's only a few blocks away from where I am now, which is great, and it's bigger and brighter and newer, too! And it's mine! Ah, it seems so unreal.
AND!! And I started my new job as a pastry cook at one of the best restaurants in Vancouver! It's been amazing so far and everyone is super nice and friendly. It's a bit different because I'm not used to being in a restaurant kitchen, but I like the noise and the activity and the hustle and bustle.
To sum it all up, I'm adulting-ing so good right now.
I've been so busy finalizing the deal with the apartment, getting a mortgage, purging my apartment of useless crap, and also working a hell of a lot, so I wasn't able to keep up with my regularly scheduled posts. I'm sure the next few posts will be a bit scattered because I'm moving in 2 and a half weeks (!!!) and I gotta go so much stuff done before then. I've already gone through my bedroom and closest and given about four small garbage bags of stuff to the Thrift store and about the same about to the dumpster. It's amazing how much stuff I've accumulated over the past few years. I just put it in my closest and forget about it. It is also a wonderful feeling to get rid of things you really don't need or use. I just have to do the kitchen and the prop cupboard next, which will be a bit of a project…
Maybe I'm being a little over-ambitious here, but because my new apartment is bigger, I can actually have a proper dining table! I don't have one now, just three stools at the kitchen counter, which is not very practical at all. I've always wanted to have people over for dinner and it sucks that I never really could at my current place, but I have big plans for the new place! I am definitely getting a dining table and eventually, I will have friends over for dinner! The apartment is south-facing, so all that lovely evening light will come in and I can even have a few chairs out on the balcony, too! Oh my goodness, I am too excited about this. I have such big ideas for this little space.

Toasted Coconut Panna Cotta with Mango, Mint, and Pineapple
Mango and Mint Layer
400 g ataulfo mango, cut into 1 cm dice
2 tablespoons fresh mint, chiffonaded
Toasted Coconut Panna Cotta
100 g shredded unsweetened coconut
415 g coconut cream
37 g granulated sugar
1 g vanilla paste
5 g gelatin sheets, bloomed in ice water
Pineapple and Lime Layer
500 g pineapple, cut into 1 cm dice
2 limes, zested and juiced
1 g vanilla paste
Combine the diced mango and mint in a bowl and stir to combine. Portion into 5 small jars or bowls and press the mango in so it's tightly packed. Keep in the fridge while you make the panna cotta.
Preheat the oven to 330 F. Spread the coconut onto a baking sheet lined with parchment. Bake the coconut for about 6 to 8 minutes, stirring every two minutes, until the coconut is evenly golden brown. Remove from the oven.
Bring the coconut cream to a simmer over medium heat. Remove from the heat, add the toasted coconut, and let steep for 15 minutes. Once steeped, strain the coconut cream over a fine-mesh sieve and press to extract as much liquid as you can. Discard the coconut. Re-weigh the coconut cream and add more cream to bring you back to a total weight of 415 g.
Bring the infused cream, sugar, and vanilla paste to a simmer. Remove from heat and stir in the bloomed gelatin. Transfer to a pitcher and pour the panna cotta into your glasses. Refrigerate until set, about 4 hours.
When ready to serve, combine your pineapple with the lime juice, zest, and vanilla paste. Toss to combine. Gently spoon the pineapple over the panna cotta and serve.
